Making Peanut Butter EVEN Better (and healthier)!
Natural Peanut butter is a staple in our house … nothin' but roasted peanuts and salt for a nice dose of healthy fat and protein.
It goes great with fruit, many veggies, smoothies, and even in yogurt…
But what if you could make peanut butter EVEN healthier? Hmmm, maybe we should introduce "The Peanut Butter Diet."

I'll need to give this a try … great idea!
I'd love to hear your thoughts on "white" potatoes (Idaho, yukon gold, red, purple, et al).
White potatoes have been lumped together with the likes of white rice, and white flour products simply because they happen to be higher on the GI index. With that said, in their pure form they're not processed and clearly contain a good amount of vitamins and fiber (via the skin).
I've also heard of white potatoes being referred to as inflammatory, but I'm not clear on whether that's simply a result of their gylcemic index. This is important to me as due to a health related issue I'm trying to maintain an anti-inflammatory diet.
Any insights that you can share in regards to your thoughts on white potatoes would be greatly appreciated!

Hi Susan – glad you liked this post. Definitely let us know what you think of the carrot peanut butter.
White potatoes are one of the few “white foods” that have some great health benefits, such as being super high in potassium. Make sure you eat the skin for fiber … and avoid the other “forms” of potatoes, like French fries or mashed potatoes loaded with cream and butter.

Tried the recipe today with some cinnamon and it was delicious. A healthy and nutritious way to get more mileage out of a jar of peanut butter

I LOVE peanut butter but I do not like cooked carrots, I can only eat them raw. But I tried this recipe anyways and am VERY pleased! It definately looks unappetizing but tastes great with my celery sticks and apple slices! Thanks!
